Basic information:
The word “nigori” means “cloudy” and its white clouds are remnants of rice. In regular clear sake, these have been filtered out, leading to a more refined delicate product. But in nigori-zake, some of the lees have been allowed to remained. Therefore it must be stored in refrigerator to keep the freshness. Nigori-zake’s flavour can be from light, dry and sour to rich, creamy and sweet. |
