Nigori-zake - a perfect drink for summer!

Basic information:
The word “nigori” means “cloudy” and its white clouds are remnants of rice. In regular clear sake, these have been filtered out, leading to a more refined delicate product. But in nigori-zake, some of the lees have been allowed to remained. Therefore it must be stored in refrigerator to keep the freshness. Nigori-zake’s flavour can be from light, dry and sour to rich, creamy and sweet.

Tips:
In general, nigori-zake contents amino acids, glucose and many vitamins. In Edo Era, Japanese people used to drink nigori-zake as nutritious drink during sweltering hot summer.
