Enjoying sake becomes a trend in Hong Kong these recent years. Sake has a very distinctive fragrance, especially the premium sake-Junmai Daiginjyo. Some sake are simple and easy-to-drink while others are wildly complex. It is also important to enjoy it with delicious food. Sake is a rice-based alcoholic beverage of Japanese origin, defined by local liquor laws as being made from rice, rice koji and water using fermentation and filtration processes.

---Floral
Delicate in style with upfront fruit and floral fragrances.
Taste ranges from dry to sweet. "Junmai Daiginjyo" and
"Daiginjyo" usually belong to this catergory

---Refreshing
Crispy, fresh, light body with a clean finish. Such as
"Daiginjyo", "Ginjyo" and "Honjyozo".

---Mellow
Intense rice flavour with medium to full bodied in taste.
Silky, supple yet firm in texture. Such as "Junmai".

---Aged
The ageing process gives this type of sake a unique taste of dried fruit and spices. The sweetness and acidity is very much balanced and firm in structure, with lingering finish, like "Aged sake".

Sake brewers make sake from November to April. Apart from the "Winter Nigori", "Shiboritate" is a seasonal sake available only in winter and spring. The "Shiboritate" means fresh sake which is bottled immediately after filtration, which results in a very fresh aroma. The palate is fruity with a dry finish and the alcohol content is higher, up to around 18%. This unique style of sake is very popular among afficionados. Its availability is limited to spring, so don't miss your chance to taste it!
