Artichoke in Lemon-parsley Sauce |

| | Ingredients: (serving size: 4) | • Large artichoke 1 piece, trimmed
• Lemon 1/2 piece
• Capers 1 tablespoon
• Extra virgin olive oil 5 tablespoons
• Yellow onion 2 pieces, finely chopped
• Garlic 5 cloves, chopped
• Parsley 3 tablespoons, chopped
• Salt and pepper to taste
• Chicken stock 2 cups
• Grated lemon zest 1/2 teaspoon
• Lemon 1 piece, juiced
• Fresh basil 2 sprigs, torn | | | Method: | 1. Trim away the tough outer leaves of artichoke and remove the choke.
2. Bring a large saucepan of water to boil, put the artichoke to the boiling water along with
the lemon half for 5 minutes, drain and set aside.
3. Soak and drain the capers, reserve to use.
4. Heat 2 tablespoons of olive oil over medium-low heat, add onions and sauté lightly until softened and golden.
5. Add the garlic, parsley and artichokes. Cook and toss (add a bit more oil if it begins to scorch) until they are
fragrant and lightly golden, about 10 minutes.
6. Season the artichoke to taste with salt and pepper.
7. Add 2 more tablespoons olive oil, a cup of stock, capers, lemon zest, lemon juice and basil.
8. Raise the heat to high and bring to a boil.
9. Reduce the heat to medium and cook, uncovered until the artichokes are tender and the liquid has
evaporated to a thickened and flavourful sauce, about 20 minutes. | | | Suggested Shopping List : | -Artichoke (France)
