What Do You Know About Biodynamic Wines?

Step into the Old World of French wines and explore the beauty of this liquid art. Biodynamic wines have been especially popular in recent years, and if you love natural products, then biodynamic wines are for you.

What Are Biodynamic Wines?

  1. Biodynamic farming is a spiritual-ethical-ecological approach that promotes the biodiversity of the vineyard’s ecosystems, achieving a balance between vine, men, Earth and stars.
  2. The biodynamic calendar acknowledges subtle cosmic forces, and helps farmers to determine auspicious pruning and cutting, cultivating, watering and harvesting times of crops.
  3. The farming process is void of chemicals or artificial additives.

If you want to try good quality biodynamic wines, give these two French wines a go!

  • Domaine Valentin Zusslin Grand Cru Pfingstberg Riesling 2011
  • Château du Val d'Or Saint-Émilion Grand Cru 2015

Savouring Natural Harmony: Biodynamic Wine Recommendations

Wine is an essential part of the perfect dinner. We introduced sustainable, biodynamic wine last time, and this time we are excited to recommend three of our top picks to add extra character to your dinner table.

Cave de Ribeauvillé Bio Gewürztraminer 2016
Produced in Alsace, France, this wine has a nose of pink pepper and lychee. The palate is structured and balanced. The wine finishes with notes of spices of ripe fruits.
Food Pairing: Canned Sardines

Domaine Magellan 2014
The vines are planted without synthetic chemicals or excess use of mechanisation. The grapes are harvested by hand. The winemaking process is kept simple, and the wine is aged in batches to enhance complexity and flavour.
Food Pairing: Lamb Chop

M. Chapoutier Châteauneuf-du-Pape Croix de Bois 2014
Vinification is done in concrete tanks. The grapes are destemmed and the vatting lasts around three weeks to bring out its fruitiness. Only free-run juice is used to make this wine, which has a lovely nose of black fruits.
Food Pairing: Steak

Indulge in French Flavours from the Sea: Wine & Oyster Pairing

Natural and dreamy… there’s something magical about the flavours of French delicacies. Today, we’d like to share with you two wine and oyster pairings so you can indulge in the amazing gifts the land and sea have to offer.

Château de Lugey Blanc des Cabanes 2018
Aged at the bay of Bassin d'Arcachon in the Atlantic Ocean. As the sea has consistent temperature, lack of light and almost no oxygen, the wine will not oxidise while ageing, and human impact is minimised. After ageing, the wine has a straw yellow colour and an irresistible aroma of tropical fruits. The body is round and smooth with hints of lemon, citrus and mineral – perfect for pairing with oysters.

Domaine Bouvet Savoie Chignin Bergeron 2017
With a bronze glow, this wine has aromas of white peach, bergamot, apricot, linden tree and honey, and a rounded body. Especially great with white meats or seafood.

Oyster Pairing Recommendations:

French Tarbouriech Speciale Oyster Nr.0
Plump, creamy flesh with balanced brininess.

French La Reserve Oyster Nr.3
With just the right texture and has a nice bite. Rich in brininess.

Exciting Offer:

During “La Fête des Vins” promotion, spend HK$3,500 or more on selected wines at city'super stores to receive a city'super shopping voucher (valued at HK$200)* (limited quantities only, while stocks last). There are other special offers too – don’t miss out!

Château la Rame Sainte-Coix-du-Mont Blanc 2014
From the Sainte-Coix-du-Mont region located in the south of Bordeaux, which is known for its production of sweet white wines. It neighbours the famous white wine region of Sauternes.

The vineyard uses only handpicked Sémillon grapes, which goes through a fermentation process over a three- to six-week period at controlled temperatures, and then aged for two years in “cuve” before bottling. It has a rich body and complex flavours.

Domaine de Savagny Vin Jaune Jura 2012
From the Jura region which is known for producing Vin Jaune. It is only 80km away from the famous Burgundy region, but its winemaking style is completely different.

Using ripe Savagnin grapes, the wine is stored in 228L oak barrels for over six years. With a golden shade, this wine has a nose of walnuts, almonds, nuts, beeswax and florals. Rich and smooth with a lingering aroma.

Domaine Saint Nicolas Cuvée Jacques 2013
From the little-known area of Fiefs Vendeens within the famous Loire Valley. It is located in the southern part of Nantes, and mainly produces rose and red wines.

Predominantly crafted with Pinot Noir, the grapes are grown using biodynamic methods. The wine is of a pomegranate red, with delicate forest fruits, fresh cherry and roasted aromas. Silky tannins with hints of herbs and leather – perfect for pairing with meats.

Clos Marie Pic Saint Loup L'Olivette 2017
From a small region of Pic-Saint-Loup in Languedoc-Roussillon, located in the south of France. This region makes only red and rose wines, similar to Northern Rhône.

Blended with Syrah, Grenache and Mourvèdre, this wine has notes of black currants and fresh cherries, firm tannins and a mildly spicy finish. Excellent with beef, lamb and other meats.

Recommended ingredients:

Qwehli French Frozen Wild European Blue Lobster
Also known as the Brittany or blue lobster, the rare European lobster was caught with artisanal fishing methods using lobster pots at a depth of less than 50 metres in the cold European seas.

French Chilled Goose Liver Extra
