Ryusuisen Yamada Nishiki Kimoto Junmai Daiginjo
Crafted using the modern kimoto method, this sake offers subtle hints of white flowers and honeydew melon. It has a low alcohol content and a fizzy texture, with an initial burst of fruitiness and a touch of minerals. It finishes crisply and cleanly, making it a delightful choice for repeated enjoyment.

New Arrival: Sakes We Love

For this year’s Sake Fair, we’re delighted to bring you a selection of new sakes that are not to be missed! From fruity, fresh sips to fragrant, elegant creations, there’s something for everyone.

Fruity and Fresh:

Dassai Artisanal Inception Junmai Daiginjo
This collection of Dassai sake is characterised by pure, smooth textures with rich fruity and rice aromas and a slightly sweet flavour. It is crafted by two young brewers who have worked at the brewery for three and six years, working as a team to oversee the entire brewing process.

Fragrant and Elegant:

Eikun Dragon & Cat 35 Junmai Daiginjo
Inspired by the Year of the Dragon, the brewery has specially invited renowned artist Mr. Soeda and calligrapher Ms. Nakamura to design the sake label. Based on the theme of Date Masamune, a historical military commander, the illustration symbolises the bravery and popularity of Masamune through the depiction of a fierce dragon. This junmai daiginjo is refreshing and crisp when served chilled; at room temperature, it exudes an elegant fragrance and a smooth mouthfeel.

Born Diamond Junmai Daiginjo
In general, sake breweries maintain product consistency through batch blending. However, Diamond is the only Born sake that has not undergone the process, giving it a unique, pure character, just like its name suggests.

Old is Gold:
Aged Sake Recommendations

Fresher is not always better when it comes to sake. Aged sake has become more popular in recent years, representing a breakthrough in the sake industry, and defying the conventional wisdom that sake should be consumed as soon as possible. Just like wine, sake can be transformed into something richer and more sophisticated through ageing. Keeping scrolling to see some of our recommendations!

Rich and Umami:

Tenzan All Koji Junmai 20-Year-Aged
Brewed using the all-koji fermentation method and aged for 20 years. Its rich and complex flavour showcases the ageing potential of the sake. Pairs well with baked cheesecake and Portuguese tarts.

Kirin Aged Honjozo Koshu
Based on the temperature and method of ageing, a sake can be defined as having a rich (“kojo”) or light (“tanjo”) maturation style. This particular bottle is of the richer style, with plenty of umami flavour.

Fragrant and Elegant:

Rihaku Vintage 2000 Tobin Daiginjo
The most premium daiginjo from Rihaku Shuzo, which is produced by ageing the sake that won the gold medal at the Annual Japan Sake Awards in 2020. Each bottle is uniquely handcrafted by skilled artisans, and the sake exhibits an elegant fruity aroma and a smooth, rounded mouthfeel.
