Japanese Marine Craftsmanship: Savour Sustainable Seafood

To ensure a stable supply of seafood without depletion is an important issue of the 21st century. Japanese Kindai University’s Aquaculture Research Institute has been conducting research in hatcheries and aquaculture technologies, and promoting a complete farming approach to replace depleting wild fish groups. They have been successful in 18 species and increased the production of ocean and freshwater resources to ensure sustainable development.

    Healthy Drinks Selection: Beloved Japanese Amazake

    Literally means “sweet wine”, amazake is a traditional beverage loved by the Japanese. Just as its name suggests, amazake is a sweet drink made with rice and bran, and can quickly replenish energy, has antioxidant, whitening and anti-ageing properties, as well as other health benefits like maintaining normal blood pressure.

    Different from other amazake made with sake lees, Takachiho amazake is crafted using raw ingredients from Kyushu and contains no alcohol, so it’s truly a drink for everyone. Added with one trillion lactic acid bacteria that are good for gut health and without adding any sugar or preservatives, this amazake is refreshing and healthy.

    Normal Castella has an egg yolk and egg white ratio of 5:3, but Gosanyaki Castella’s is 5:3. Also, mixing carefully and getting the temperature right are key to baking the perfect Castella. Today, there are only very few artisan bakers in Nagasaki that are able to craft Gosanyaki Castella.

    Ramen Mania: Time for Authentic Kyushu Ramen

    Kyushu is where tonkotsu ramen originated, and its unique taste is loved across Japan. In Hong Kong, the famous Ippudo brand is known for its tonkotsu ramen flavours, and has launched a DIY ramen set and a vegan version.     Amakusa Daio, the famous and largest chicken in Japan, once became extinct in the early Showa era, but was successfully revived in 2000 and is now known as the “legendary native chicken”. Adult chicken can reach 7kg in weight, and is 1.5 to 3 times larger than normal chickens. It has a bouncy texture, and is succulent, juicy and rich in flavour.     A very rare Chinese vegetable that is grown in Japan. Minimal chemical fertilisers and pesticides are used during farming. The pak choi has a mild flavour, excellent texture and exquisite sweetness. Perfect for stir-fries and hot pot.

    Tanaka Farm Spinach
    From sowing to harvesting, the temperature and water quality are managed according to the climate of the four seasons. All-natural, home-fermented compost is used for a peace of mind.     Sonoda Farm has stopped using any chemical fertilisers, herbicides or pesticides since 2010. Many sheep can be found inside the farm, and they help to eat the weeds. The farm places great importance in food safety education and sustainability, and has obtained JAS organic certification.
