Whole Fish with Tomatoes in Sweet and Sour Sauce

Method:

1. Pat the fishes dry and coat with corn starch lightly before cooking. 

2. Heat oil in a pan. Pan-fry seabass for 3 minutes on each side. Add cubed tomatoes. 

3. Put in the sliced salted fish on the side, skin facing upward. 

4. In a bowl, mix ginger juice, vinegar, sesame oil, sugar, soya sauce and fish sauce well. 

5. Add the sauce and simmer for 15 to 20 minutes.  
Clams Risotto

Method:

1. Stir-fried 3 cloves of minced garlic with 2 tbsp olive oil.

2. Add 50g of risotto and stir well. Season with salt and add 25-30g unsalted butter.

3. Add 75ml water. Over a medium heat, cook for 12 minutes.

4. Add 2 tbsp water and clams, cook until clams opened and plate. 

 
Grilled Eggplant

Method:

1. Cut eggplant in half. Prick the meat with knife.

2. Grill the eggplant, meat facing down. Serve with seaweed flakes.
